Quick And Easy Quinoa Pizza
Who doesn’t need a good pizza in their life? Probably being one of the world’s most popular dishes it’s first on my list of recipes. Only this one will transform your body into a powerhouse. This recipe is delicious and really filling so you don’t need a lot to fill you up like other pizzas. I’ve had great feedback with this recipe and it’s a staple at the wellness center where I work. Sorry pizza delivery man but you’re going to have to get another job ;(

Ingredients
Pizza Base
  • 250 grams Quinoa (white, red or black)
  • 3 tbsp Chia Seeds optional but highly recommended
  • Water
  • 1 tsp salt
Nut Cheese Topping
  • 250 grams almonds and/or cashews
  • 2 tbsp pine nuts optional
  • 1 tbsp Tamari
  • 1 clove garlic
  • 1/2 juice of lemon
  • tsp salt
  • 100 mls hot water more if required
Tomato Topping
  • 4 tomatoes
  • 2 tbsp olive oil
  • 1 tbsp Tamari
  • 1 tsp sweet paprika
  • 3 drops Stevia

Pizza Base
  • 250 grams Quinoa (white, red or black)

Instructions
Pizza Base
  1. Preheat oven to 220 degrees
  2. Simply put all dry ingredients straight into a high speed blender
  3. Cover with water and blend until it’s a smooth paste
  4. Spread it out on baking paper / parchment paper (USA)
  5. Bake for 15 -20 minutes or until dry in the middle.
Nut Cheese Topping
  1. Blend all ingredients until it’s a smooth paste (you will need a high speed or hand blender) Notes:- This nutritious nut cheese is great with pasta , pizza or as a dip with raw veggies.
Tomato Topping
  1. This tomato sauce can be raw or cooked served with pasta or pizza or just with wholemeal rice and an egg for a quick, balanced, healthy meal. I love to serve this raw to get more nutrients out of it, ultimately saving me time and money 😉 Add your favourite raw veggies i.e peppers, mushrooms (if allowed) and top with fresh oregano or basil.
