Easy Wizzy Melon Gazpacho
Gazpacho is a Spanish summer cold, raw soup. It normally contains breadcrumbs. I tried a melon version in a hotel once and tried to initiate it at work. It turned out well for them and I hope you can capture the good things of Spain in your kitchen, wherever you are in the world and pretend you're on a healthy holiday 😉 Alexander from Russia this one was for you !!!

Ingredients
  • 1 large peeled cucumber
  • 8 tomatoes
  • 1 green pepper
  • 3 cloves garlic
  • 1/2 leek sneaky, cheeky, secret ingredient contributed by Natasha she's not putting out any fires today guys
  • 1 tablespoon Tamari
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoon salt
  • 2 handfuls almonds preferably soaked
  • 2 tablespoons flaxseeds ground

  • 1 tablespoon lemon juice
  • 1 1/2 teaspoon salt
  • 2 handfuls almonds preferably soaked
  • 2 tablespoons flaxseeds ground
Instructions
  1. Add all ingredients to a high speed blender and blend till smooth.
  2. Chill for at least an hour and serve with whole almonds as a starter 15 mins before main meal.
