Apple Crumble and Custard
One of the UK's most beloved desserts, apple crumble has been around for generations. It tastes amazing and has been described as a comfort food to be enjoyed with your loved ones. The only downside is it normally puts you to sleep on the sofa for the rest of the day because it's full of refined sugars and unhealthy fats. So I've made you a new version that will delight your taste buds , alert your pleasure centres and give you a warm hug from the inside out. Oh! and did I mention repair, replenish, nourish and detox your body too? I'm so happy to introduce to you my favourite creation so far. Enjoy on special occasions or weekends etc.

Ingredients
Base
  • 4 medium apples
  • 4 pitted medjool dates
  • 1/2 teaspoon aniseeds
  • 2 tablespoons of Oats
  • Juice of half an orange and it's zest
Crumble topping ingredients
  • 250 g Spelt flour
  • 100 g oat flour grind them or if you don't have a grinder just use whole oats.
  • 2-3 tablespoons coconut oil cold - pressed
  • 1 tablespoon aniseeds
Custard
  • 6 tablespoons coconut oil
  • 12 tablespoons quark
  • 2 tablespoons organic sheep's/goats/oat milk
  • 1 banana
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon sea salt
  • 1 vanilla pod
  • juice of half an orange
  • 1/2 teaspoon turmeric

Base

Crumble topping ingredients
  • 250 g Spelt flour

  • 2-3 tablespoons coconut oil cold - pressed
  • 1 tablespoon aniseeds
Custard
  • 6 tablespoons coconut oil
  • 12 tablespoons quark
  • 2 tablespoons organic sheep's/goats/oat milk
  • 1 banana
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon sea salt
  • 1 vanilla pod
  • juice of half an orange
  • 1/2 teaspoon turmeric
Instructions
Base
  1. Blend the above ingredients in a high speed blender or hand blender.
  2. Add a little water if it's not a sticky gooey mess.
Crumble topping ingredients
  1. Mix all ingredients together massaging the oil into the flour, rubbing through your hands and fingers until it becomes a crumble with all the oil mixed.
  2. Then add on top the delicious gooey mess. Spreading and covering it all.
  3. Put it in the oven till topping is golden brown.
Custard
  1. Make your usual Budwig mixture using coconut oil instead of flaxseed oil this time
  2. Then add a handful of pine nuts, raisins and cashew nuts.
  3. Blend all the above together and heat through on a low heat (don't bring to boil) or as another delicious alternative serve chilled.
