Beanballs
If you love meatballs and have had to give up processed meat do not fret. Here is one of my missing meat recipes. Gluten free as they're made with millet. Enjoy with chocolate and oat fritters, amayonazing, curry pepper sauce and roasted veggies to make this fantastic fun platter. Great for Friday nights with friends. Why not make them with some kale chips and caulicorn, (popcorn made from cauliflower) they'll love you for it!

  • 125 grams cooked millet
  • 1 jar of organic white beans or chickpeas I use lidl brand
  • 1 red or green pepper
  • 1 Onion
  • Fresh parsley
  • 2 tablespoons coconut oil

  • 125 grams cooked millet

Instructions
  1. Boil millet until soft.
  2. Meanwhile, preheat oven to 220C
  3. Chop up veggies to go into food processor. Press pulse a few times until it looks like grain sized pieces.
  4. Drain and rinse millet, mix all ingredients together into a bowl. Add coconut oil and form little balls.
  5. Place on parchment paper and bake in oven for 10 mins.
  6. To finish off, heat some more coconut oil to shallow fry on low heat to seal them and make them crisp 😉
Recipe Notes

I ate these with roasted veggies and dips. This went down a treat. Can be eaten hot or cold. Sprinkle some sunflower seeds on for a whole balanced meal.
